Roquefort Dressing

 

Pursuant to a promise made about sixty years ago, we do not give out the recipe for our Roquefort dressing. This is not quite our recipe, but is similar. For the real thing see us on Fort Street, we sell it to go.

 

Serves 6

 

4 ounces of Olive oil

2 tablespoons of wine vinegar

2 tablespoons of lemon juice

¼ teaspoon of dry mustard

¼ teaspoon of paprika

 

Combine the ingredients and mix well. 

 

Add 4 ounces of mayonnaise.

 

Mix well.  You have just made a French dressing.

 

Add 6 ounces of crumbled Roquefort cheese to the French dressing.

 

Enjoy!

 

Roquefort cheese is expensive but worth it. The cheaper cheeses just don't have the same flavor.
