German Style Potato Salad
Serves 6
Ingredients:
Four large potatoes
6 oz cider vinegar
6 oz. oil (use a neutral oil like corn oil)
4 oz sugar
˝ teaspoon white pepper
One teaspoon salt or to taste
One cup chicken stock (or use water and chicken base if you must)
One large onion diced
One half teaspoon dried mustard (optional)
Directions:
Boil the potatoes with a bit of salt. After cooking; peel and sliced them. The flavor is much better if they are peeled after cooking.
Sauté the onion with oil, pepper and salt till transparent, use low heat and do not brown. Add the remaining ingredients other than the potatoes and bring to a boil. Remove from heat and let the dressing cool down to a warm room temperature. Then add the dressing to the sliced potatoes. The potatoes should still be warm. Mix the dressing gently with the potatoes.
If desired you might want to add some chopped cooked bacon, or chopped dill pickle, or chopped parsley.
