Roesti Potatoes
Ingredients:
2 Large Baking Potatoes, baked or boiled, not peeled
¼ cup Unseasoned fine Breadcrumbs
½ teaspoon Salt
¼ teaspoon White Pepper
1 pinch Nutmeg
Butter for frying
Grated Swiss Cheese
Method of Preparation:
Grate the cooked potatoes with a coarse grater. Gently add salt,
pepper, nutmeg and breadcrumbs. Melt about 2 tablespoons butter in an 8"
ovenproof skillet over medium heat. Cook about five minutes without turning.
Turn the potato mixture like a pancake, adding more butter if needed. Cook about
4 minutes. Top with Swiss cheese. Place the skillet into a preheated 350° oven.
Bake for ten minutes. Slide the potato mixture onto a heated platter. Serve with
a cake server.
